People mostly use allkeyshop/gg.deals or similar to compare game values. There's small exceptions when games are bundled.

Well, they're generally used as a currency in trading, because they generally have a more standard price when buying/selling them.
Basically, you can sell it on the Steam market, or keep it and trade it for some other game, they're broadly accepted by other traders.

Well, there's still some difference even with the sale. For me for example, it makes quite some difference.
I saw someone offering half a key for SF V, but i don't know, 1 TF2 key seems fair enough for both sides.
(Oh, and also, if you see people talking about half keys, there are also "Tour of Duty" tickets, they are also used as a currency, and they're basically half of the value of TF2, and they are often to referred as half keys)

Gems can also be sold on the market, if you pack them into sacks of 1000 gems each sack, and yes, they're the ones you get by converting emoticons and whatever in the inventory.
Unfortunately, i managed to get my hands on SFV meanwhile.
